many, many root vegetables

I am making a curry so robust that it is kicking my ass and attempting to overflow from my soup pot.

And still, not all my veggies are used up.

I'm resisting the urge to make borscht, too, RIGHT NOW. Especially because I'm still wearing my pajamas, haven't eaten lunch, and have a work meeting in an hour and a half.

I was thinking borscht, but now I'm considering making a mixed root veggie gratin instead. EAT IT UP YUM!!
