many, many root vegetables

snugglekittyI am making a curry so robust that it is kicking my ass and attempting to overflow from my soup pot.
And still, not all my veggies are used up.
I'm resisting the urge to make borscht, too, RIGHT NOW. Especially because I'm still wearing my pajamas, haven't eaten lunch, and have a work meeting in an hour and a half.
