A vision grew in my mind, based on the leftover grilled items from the barbecue (steak and mushroom, especially). Yesterday [livejournal.com profile] findingthegirl made a great wrap at my direction for my lunch. But something was missing. After a trip to the farmer's market, I am happy to tell you that spinach was the secret ingredient.



1 cooked portabella mushroom
1 small piece of cooked steak (mine was about 3" by 3" by 1")
fresh spinach
1/4 fresh avocado
pickled pearl onions
sauerkraut
1 tbsp goat cheese
1 piece of naan or pita
honey mustard sauce or dressing

Chop all but the wrap and combine. Dress greens separately, then add to mixture in a proportion that makes sense to you. Heat wrap for best results (this keeps it from tearing) in a microwave or toaster. Put filling in wrap and stick a toothpick in. Serve with a dill pickle and potato chips, if available.

If you wanted to make this GFCF, you would substitute black beans for the goat cheese and use a corn tortilla. And once you've gone that far, why not try lime dressing instead of honey mustard, and maybe a little salsa? Mmm, tasty!

For a vegetarian version, I'd suggest using soy bacon in lieu of steak. Or, you could go in more of a garden style direction with sprouts. Crunchy and nutritious!

I make that wrap all the time, minus the sauerkraut. It's so versatile, you can throw anything in it! Try it with hummus as a base. Or, once we cooked up some zucchini in a little olive oil and salt and pepper and garlic, and then put it in wraps. That was amazing. No matter what you've got around the house, if you have spinach, you can make a tasty, filling wrap. Yum!

I can't eat hummus, alas. But yeah, the zucchini idea sounds good, or maybe some summer squash...

I also really enjoy making fattoush salads in the summer. I cut up a pita and put it in the oven and put little pita chips all around it. Little Armenian cucumbers are awesome for those, too.
