Fantastic vegan mezze.

rednikki, check it out!
Quinoa Pilaf
2 c cooked quinoa
1 c cooked orzo (I used whole wheat, veggie would also be interesting)
1/2 c golden raisins
1/4 c pine nuts
1/2 Vidalia onion
rosemary
olive oil
salt
Sautee onion with pine nuts, olive oil, and seasonings. When onion is tender, add grains. Continue cooking over low heat until all is warm, adding more oil and salt as needed.
I was getting a little tired of quinoa fried rice and quinoa and lentils, and I've missed rice pilaf! This was a great substitute.
Garlic Green Beans
tipped green beans
fresh garlic
coarsely chopped almonds
olive oil
Sautee ingredients in a pan, being careful not to burn garlic. Serve hot.
Oven-Roasted Vegetables
1 butternut squash
1 turnip
olive oil
thyme salt
Preheat oven to 350. Cut vegetables into large pieces. Arrange on an oiled baking dish. Pierce top sides with a fork. Sprinkle with thyme salt. Bake for forty minutes.
I enjoyed this with some of the delicious mixed veggie pickles
mrpet made me last week. I rounded out the meal with a piece of vegan carrot cake, although baklava would have been even better.
I ran out of steam before I tried making the cucumber salad from the soy yogurt, but it's on my list. I even have the fresh dill.
