I went once again to the farmer's market, and picked up some more wonderful corn, and peaches. And some mesclun, and pea tendrils. And some bread. And delicious little Armenian cucumbers, which are so good I can't believe it. Mmmm. I love how cheap and fresh everything is.
So, I used it all to have a light, easy dinner. First, I toasted walnuts. Then, I added them to a salad of mesclun and cucumbers, with raspberry vinaigrette dressing and Jarlsberg cheese grated finely. That was so good! And we also had the extremely fresh and delicious corn on the cob.
The toasted walnuts were also great on some leftover soy noodles with veggies and chicken. And they were so easy to make. I should do it again (and again!).
I need to make myself stop buying the savory bakery bread though. It always gets stale before I do much of anything with it. It seems to work much better if I get the dessert/breakfast bread which is a little bit sweet. Pumpkin!
