So, recently I have been trying to improve the quality of my lunches.

I like to eat lunch, but I don't always plan ahead. So then I wind up eating whatever happens to be in the house. And sometimes that's great, and other times, it's... not very satisfying.

So this week, I've been trying harder. For a few days, I had chicken with roasted red pepper cream sauce and pasta. Then I had the same chicken, only with potatos and greens. Today was good, too - the leftover potatos with curry, cheese, and kale.

I really liked how the kale came out so I thought I'd share the recipe.



Fill a small bowl with torn kale. Heat a pan on the stove. When it's hot, add half a teaspoon of sesame oil and a coarsely chopped garlic clove. Once the garlic begins to brown, add the kale. Sprinkle salt on top. Turn every few minutes until done. Then, sesame garlic kale! Yum!

(Usually I use olive oil, but the sesame added something, for sure.)
