I'm attracted to a wide variety of women, so it's hard to generalize there, but my taste in men is much narrower. I'm attracted to very smart, rather geeky men who are sweet. Though I think caring about physical attributes is shallow, I notice that the men I'm attracted to almost always have long, rather scruffy hair and beards. I guess I'm shallow. :-) They're always great readers, of course they read science fiction, and they usually like to play games (board games and the like, not head games).
I'm so predictable about type that my friends can pick out someone who I'll be attracted to before I even say anything. I have a personality type more than a looks type, but looks: tall, femme, dark hair/dark eyes, glasses. personality: smart, assertive, and some indescribable mix of toughness and kindness.
I always think I have a type, then I meet someone who completely floors me and makes me rethink the whole idea. For a while, I said I was into tall brunettes- while I dated 3 short blondes... :) Or I thought I was into femmes, male and female, til I got seduced by genderfuckery and butches. Or I'd think I wasn't into a type, like manly men types. Til I met a geeky guy who is definitely a Man, and whom I adore. But, I don't really think I have a type for the same reason I prefer Polyamory: I like many different things. Rather, I have "preferences". They run along the general lines of:
Tall & slender or Short and curvy
Long haired Brunettes or Short haired blonds (Though short haired brunette can work, too)
Everything else, from breast/hip size, eye color, skin tone is pretty mutable for me. I tend to look at the overall person, not focus on individual characteristics.

Except for the women. So far there's been exactly one woman who's tipped me off of Kinsey's 0. I'm certainly open to other possibilities, but don't have enough experience to have a type there.
With men, the only thing I'd add is that they tend to be very comfortable in their bodies, and tactile quite apart from sex.

For women I don't really have a type, even though my 2 primary partners are the same height, both blonde with the same light complexion, have the same shoe size, and were born in the same year and month, one on the 3rd and the other on the 30th. Really, I DON'T have a type!

Identifying (and, more to the point, explaining) the personality features that make me attracted to someone is hard, so I'm just going to talk about the physical attributes that tap into my lizard brain and make me think someone's sexy. That plays more of a role in my mate selection than it really ought to, but that's the lizard brain for ya.
- Very long, black, or at least dark, hair. - Blue eyes. Preferably with sparkles. - Full lips. - Pale, but not blue skin. - 5'4"ish. - Curvy. Bones are no fun. If the doctor doesn't think you're overweight, you're going to misfire on my lizard brain. - Huge tracts of land. (seriously, though, small breasts can be fun, but they don't ordinarily fire off the lizard brain)
Of course, there's a lot more going on than the physical attributes, and I can definitely think of very sexy people who are none of those things. Attitude is important. :-)
Yes - the good old lizard brain. Mine also believes firmly that skinny women just don't have what it takes to make it through the long winter. Or maybe it just thinks that they're safer around me if they have good padding. Heh heh.
I am very attracted to powerful women who own their sexuality. Did you watch the last season of Dancing with the Stars? (or maybe it was 2 seasons ago). Think Laila Ali. Type doesn't work for me. I joke that I'll do anything with 2 legs, but that really isn't true. I'm quite picky but there is no one type I like. For me its all about personality and chemistry with any gender.
Good question! People I like tend to be clever and silly, with at least a pinch of femininity. Many have been acquiescent, deferential, and helpful. Smart is good for talking, but not critical for me to find you sexually attractive, although intelligent conversation is important for the F part of an FWB. Some dedication to being the touchee during sex usually makes things work better. I am...enthusiastically eclectic when it comes to physical type, aside from my tastes being shamefully ableist. Oh, and I am dismayed that I still haven't had sex with a natural redhead.
I'm into men, but there just isn't one identifiable type that attracts me. I think the only physical trait that all my crush boys have in common is that they don't smell bad.
That said, I do tend to prefer fat over skinny. I know most women aren't into fat boys. Fine, all the more for me. :-)
I consistently like my men short and skinny with dark hair, brown eyes, and big noses. Also, I like 'em artsy--musicians and writers mostly, but sometimes actors, dancers, photographers, etc. Not all of my exes or past crushes have fit the mold, but usually they fit most of it. My current guy fits my type exactly. I think that maybe all along I have just been looking for him.
I have less experience with women, but I tend to go for girls with long curly hair and nice breasts.
