Making earrings. It's really easy -- it has to be if I can do it, because my hand-eye coordination is below average! And the beads are usually pretty cheap: a lot of beads are ten or twenty cents apiece, and when you want to go all out and splurge on an amazingly fabulous bead, it's like two dollars. So you can go to the bead store and let out all of the magpie in you. :-) "Oooh, colors; gimme!" Then you can take the pretty colors home and play with different combinations until you've found one you must keep. Making earrings has some of the creative satisfaction of knitting without taking as long and without as large a penalty if you make a mistake.
I haven't been there in awhile, but there used to be a Beadworks store on Church Street in Cambridge that had lots of jewelry-making supplies and short workshops in how to make stuff. I hope it's still there!
Now you'll probably tell me that you used to be an expert jewelry-maker and gave it up years ago. :-)
